Bluewater’s ‘Coffee Rock’ Aims to Redefine Coffee Flavor and Café Efficiency Across Europe

Swedish innovation is taking aim at one of coffee’s most overlooked ingredients—water. Bluewater has officially launched its new product, Coffee Rock, in Europe, introducing a mineral-engineered formula designed to elevate flavor, improve consistency, and extend the life of café equipment.

Part of the BLUE AB portfolio founded by entrepreneur Bengt Rittri, Bluewater has built its reputation on developing purpose-driven technologies focused on clean air and water. With Coffee Rock, the company is bringing that same science-led approach into the specialty coffee space.

While coffee discussions often center on beans and brewing techniques, water makes up more than 98 percent of every cup. Its mineral composition directly affects how coffee extracts—impacting taste, aroma, and texture. Coffee Rock is designed to optimize that process with a carefully calibrated 6:1 magnesium-to-calcium ratio, helping enhance sweetness, clarity, and body.

The product made its global debut earlier this month at the World of Coffee event in Bangkok before arriving in Europe at London’s Bloomtown Festival. There, attendees were able to experience the technology firsthand through a live café setup, demonstrating how precise water mineralization can transform the final cup.

Coffee Rock was developed over two years under the leadership of Bluewater’s Chief Scientist Dr. Ahmed Fawzi and Product Lead Maximillian Lundin. Their focus was not only on flavor but also on solving practical challenges faced by cafés.

One of the most persistent issues in coffee operations is limescale buildup and corrosion in espresso machines. These problems, caused by inconsistent water chemistry, can lead to costly maintenance and reduced equipment lifespan. Coffee Rock’s thermally stable mineral profile is engineered to significantly reduce these risks, helping machines run more efficiently and last longer.

The formula is designed to work seamlessly with Bluewater’s Café Station systems, which use SuperiorOsmosis technology to remove up to 99.7 percent of contaminants while using less water than traditional filtration methods. This aligns with the company’s broader sustainability goals, offering both environmental and operational benefits.

Now available in markets including the UK, Sweden, North America, and the UAE, Coffee Rock reflects a growing shift in how the coffee industry approaches quality. By focusing on water as a key variable, Bluewater is encouraging cafés and baristas to think more holistically about the brewing process.

As specialty coffee continues to evolve, innovations like Coffee Rock highlight how small adjustments—down to the mineral level—can make a noticeable difference in every cup.
