
Pensacola’s evolving culinary landscape is set to reach new heights with the announcement that internationally acclaimed chef Akira Back will open a signature rooftop restaurant atop the future Reverb by Hard Rock Pensacola. Scheduled to debut alongside the hotel in 2029, the new venue is expected to become one of the Gulf Coast’s most anticipated dining destinations.
The restaurant, officially named Akira Back Rooftop Restaurant at Reverb by Hard Rock, will introduce Chef Back’s globally celebrated style of modern Japanese cuisine to downtown Pensacola. Known for blending Japanese techniques with Korean influences and contemporary culinary innovation, Back has built an international reputation through a portfolio of award-winning restaurants spanning cities from Paris and London to Hong Kong and Dubai.
Perched above Pensacola’s Maritime Park district, the rooftop destination will offer sweeping views of the waterfront, Blue Wahoos Stadium, and Pensacola Bay. Developers envision the space as more than a restaurant, creating a lifestyle destination that combines exceptional dining, vibrant nightlife, and immersive entertainment in a dramatic rooftop setting.

Guests can expect a menu featuring many of Chef Back’s signature dishes, including the renowned AB Tuna Pizza, a crispy wafer-thin crust topped with tuna sashimi, ponzu-infused aioli, and micro shiso. Other highlights will include the chef’s celebrated 48-Hour Short Ribs, prepared with Australian wagyu and traditional Korean galbi jjim flavors, as well as the interactive Nazo 9 experience, where nine chef-selected dishes are revealed tableside throughout the meal.
Beyond the food, the venue aims to deliver a complete sensory experience. Plans call for a sophisticated cocktail program, premium sake offerings, sunset gatherings, and evening entertainment that may include live DJs and poolside events beneath the stars. The design will balance sleek contemporary architecture with open-air spaces that showcase Pensacola’s natural beauty and coastal atmosphere.
